We have made this selection of a centenary barrel. Those who know this type of wine know that the passage of time is fundamental, its oxidation over the years and even better if they are decades.
Our selection is a very old Fondillón with a classification of more than 50 years, which is the highest classification that the Regulatory Council grants to the oldest Fondillón as minimum ageing age, coming from centenary cellars that ceased their activity in 1960 and that thanks to extraordinary conservation conditions have reached our days some very old soleras unaltered for more than 60 years in barrels dating from the mid-nineteenth century.
